GENERAL DESCRIPTION OF THE ORGANIZATION
Sanpietro Società Cooperativa Agricola is a leading food company focused on ready to eat products, namely semidried fruits and vegetables  that are currently packaged in a protective atmosphere, to be kept refrigerated and distributed in major retail chains in Europe.

Innovation is a core part of the company; research is focusing on new products and technologies development, improvement of the food products quality and safety and development of new packaging strategies, including Innovative and Sustainable Food Packaging.

COMPETENCES AND INVOLVEMENT in GoJelly
SANPIETRO is involved in developing human food products from jellyfish biomasses, according with the European laws on novel foods, considering ecological, safety, nutrition, legal, economic, social and public acceptance issues. This will be done throught:

  • Development and validation in cooperation with CNR-ISPA, at prototype and pre-industrial scale new processing methodologies based on mild temperature drying technologies able to preserve the jellyfish features useful for food uses.

My research is focused on studying and applying food processing methodologies and technologies in order to obtain innovative fresh food produces without preservatives and with a sustainable shelf-life for retail and distribution needs.

My research interests and activities over recent years have mainly centered around Research and development projects in the field of Quality and Safety standards for Agri-food industry and agricultural products and foodstuffs, Innovative non thermal processing technologies to improve the quality and safety of ready-to-eat meals, Mediterranean diet to Improve the shelf life and food safety of vegetables;
